About this wine
Ilatium Morini's Soave comes from the family's La Calle vineyard, about 80 metres up in the centre of the Val d'Illasi, where pergola-trained vines grow on the valley's calcareous alluvial soils. The grapes are picked in early October and left to dry for about twelve days, then macerated in the press for twelve hours and fermented cool in stainless steel, where the wine also ages. The result is a rounded, fragrant white with white flowers and tropical notes accented by touches of vanilla and toast.

from the producer
Family-run Ilatium Morini farms vineyards around Val di Mezzane, Illasi and Valpantena in the Verona hills. Seven brothers and cousins guide the estate, which began making its own wines in the 1990s after years of supplying grapes to a cooperative. Today the portfolio spans Soave, Valpolicella and Amarone, with hand harvests central to the winery’s approach.
